Baked Eggs with Courgetti & Leeks

A super easy & comforting brunch recipe for a lazy Sunday. The best part is that you get to pierce those yolks and watch them ooze!


  • 2 large free range eggs
  • 1 courgette spiralised
  • 1/2 leek chopped
  • 30ml cream


  1. Fry leeks and courgetti then layer in an oven proof dish.
  2. Make small holes in the veg for the eggs and crack them on top.
  3. Pour cream over, season and bake until the egg whites are set. This depends on the size of the dish but will take approx 20 mins.
